Preparation Steps

Line a baking tray with non-stick baking paper. Place beef mince, fresh breadcrumbs, crumbled feta, chopped black olives, lightly beaten egg, finely chopped red onion, salt and cracked black pepper in a large bowl and mix until well combined. Divide the mixture into 6 portions and shape each portion into a flat patty. Place patties on prepared tray and refrigerate for 15 minutes. Heat a non-stick frying pan over medium heat. Cook the patties, in batches if necessary, for 3-4 minutes each side or until cooked through.
Split burger buns and lightly toast then spread with whole egg mayonnaise. Place the bases of the buns on serving plates and top with patties, baby rocket leaves, Fletchers Sweet Sliced Gherkins, char-grilled capsicum and remaining bun. Serve immediately.
